Foodie Friday: Recipe- Liberty Inn Apple Cobbler


Liberty Inn -Apple Cobbler

 Preheat oven to 300^
Crust:
3 1/2 C all purpose flour
2 TBS sugar
1 tsp salt
2 sticks unsalted butter
4 TBS Crisco, cut into 1/4 inch pieces
2 TBS ice water

Sift together flour, salt and sugar into a large bowl.  Using fingers, work in butter and shortening until it resembles course crumbles.  Add ice water  and work with fingers until water is incorporated and dough comes together.  Spray a 9x13 baking dish with nonstick spray.  Roll out dough on lightly floured surface to thickness of pie crust.  Lone baking dish with dough.

Apple Filling
 4 lbs baking apples, such as Golden Delicious
1/2 C sugar
1 1/2 C brown sugar
1/2 tsp ground nutmeg
1/2 C flour

Sift dry ingredients.  Put apples in small pan and cook on medium heat 2-3 minutes.  Add dry ingredients and cook until apples are soft.  Remove apples from heat and chill.  Place in baking dish over pie crust.

Cream Cheese Filling
8 oz cream cheese- room temperature
1 large egg
2/3 C sugar
1 tsp vanilla extract
Combine all ingredients in mixing bowl and mix until smooth.  Pour over apples and swirls slightly.

Oatmeal Streusel 
3/4 C all purpose flour
1/2 tsp ground cinnamon
1/2 C packed brown sugar
3/4 C rolled oats
1/2 C unsalted butter
 Mix ingredients and spread evenly over filling. Bake in center of oven for 1 hour and 15 minutes.
  Best served with vanilla ice cream!
